Cookies stuffed with Snickers which are then rolled in icing sugar. Oh lawd hold me. These little Snickers Stuffed Cookie Snowballs will crumble in to your mouth like shortbread on steroids. Delish!

Snickers Snowballs

I was out grocery shopping a couple of weeks ago and as I walked on by the chocolate aisle a little bag of Snickers Bites took my eye, they’re little mini Snickers and if there is one vice I have- it’s this. Peanuts, caramel and nougat smothered in chocolate- what’s not to love?! PS- this is not a paid sponsorship, I just really like Snickers.

Rather than taking the bag home to eat them all up on my own, baking something instead sounded like a great idea- baked goods are for sharing after all. After consulting my good friend Google for “chocolate stuffed cookies”, I happened upon an awesome recipe by Life Made Sweeter.

The Life Made Sweeter recipe uses frozen balls of Nutella for the stuffing, which I will definitely try out one day because they look DELICIOUS but this time I decided to mix things up and use my little Snickers Bites and walnuts instead of pecans because that’s what I had in the cupboard.

Snickers Stuffed Cookie Snowballs

When rolling the balls out, make sure they’re tight so the dough sticks to the chocolate. If you’d like to make this recipe go a little further for sharing, you could try adding one piece of chocolate to one tablespoon of dough rather than two tablespoons of dough although you may need to adjust the cooking time to 8-10 minutes. You’ll also need double the amount of chocolate bits if you try this out.

Walnuts were used in this recipe but any ol’ nut will do, whatever floats your boat! I just love walnuts in baked goods so always have them on hand. Use up whatever is in your cupboard and you’re set!

These little cookies are best eaten with a hot cuppa tea or coffee and can be frozen for later!

Snickers Stuffed Cookie Snowball
Instructions
  1. Line one large or two medium sized baking sheets with baking paper and pre-heat oven to 180 degrees celcius.
  2. Using a stand or hand held mixer cream together butter and sugar until light and fluffy.
  3. Add vanilla and mix until combined then slowly begin to add flour, 1/4 cup at a time until combined, scrape down the sides of the bowl occasionally.
  4. Fold in walnuts until just combined,
  5. Using a tablespoon measure, scoop out a ball of dough. Flatten the dough in to a disc and add one Snickers Bite or piece of chopped Snickers. Place another flattened tablespoon of dough on top, press the sides together and roll in to a ball then place on your baking tray. Repeat until all the dough has been used.
  6. Chill the balls for 30 minutes in the fridge.
  7. Bake the cookies for 13-15 minutes or until golden- you may need to rotate the pans halfway through cooking.
  8. Remove from oven and once they're cool enough to handle, roll each ball in sifted icing sugar.
  9. When the cookies have completely cooled, roll them in icing sugar again.

If you can't find individual Snickers Bites you can use regular Snickers cut in to 2cm lengths.
